  1. From a period in time when people were not wasteful with their food and ate every part of the animal after butchering. A great lesson to be taught to so many people these days…


    • Yes, they were very thrifty and resourceful, and while I admire that, and try to make use of everything that comes into my kitchen, I have to admit that I am glad I’m not bringing in whole animals! I do want to try some of the organ meat recipes, but I will start with small quantities.
