Mrs. Raymond’s Ice Cream


Summer is here and it’s time for some good old fashioned ice cream!  The above recipe was slipped between the pages of The Young Housekeeper’s Assistant, 1874.  It appears that you would cook the first 4 ingredients into a sort of custard, and once cool, add the rest, then freeze.  I’ll type the recipe below to make it easier to read.

Ice Cream

  • 1 quart milk
  • 2 eggs
  • 2 tablespoons flour
  • 1/2 cup sugar

When cool add:

  • 1/2 cup sugar
  • 1 tablespoon vanilla
  • 1 pint cream
